No Bake: Chocolate Peanut Butter Bars

Ingredients

For The Base
200g (7oz) of Digestive Biscuits
70g (1/3 cup) Unsalted Butter
120g (1/2 cup) Crunchy Peanut Butter

For The Chocolate Layer
200g (7oz) White Chocolate 
60g (1/4 cup) Creamy Peanut Butter, divided into 2 lots of 30g

First off you will need to make sure you have all your ingredients at hand and ready to use, I went and brought all the stuff just to write up this blog post. As i didn't have any of the items in the cupboard.
You can use any chocolate that you prefer, I chose white chocolate as milk or dark chocolate makes me ill. I also chose to use a mix of both Crunchy and Creamy peanut butter, but you can only use just the 1 type.




First off you need to blend all your 200g of digestive biscuits until they go into a crumb form. Then put these to one side whilst you sort the next 2 ingredients to be added to this.
If you aint got a blender, just put them in a sandwich bag and hit with a rolling pin (this was gonna be my option until i found the blender at back of the cupboard).






Next up, melt your 70g of unsalted butter that you have measured out, do this over a low heat so as to not burn the butter. This should roughly take about 5 minutes or maybe even less.







And also have your first lot of 120g of peanut butter ready, I chose to add crunchy peanut butter to the base as i wanted it to add a bit of extra crunch to it.





Once the butter has fully melted, add this along with your peanut butter of choice into the bowl that your crumbed digestive biscuits are. Mix this together until it all starts to stick together.
I chose to mix it in the bowl first, then added it back into the blender to give it that final quick mix.






Once all blended, it should look something similar to this.....yes i know it doesnt look very appealing does it? But trust me it wont look like this in the end haha














Next up you will need to line your square bake tray with non-stick baking paper (i picked mine up for the poundshop in there baking section). Making sure to line it right up to the edges with no gaps for stuff to leak through.






Pour the biscuit base into the tin, and spread out evenly making sure to go right up to all edges of your baking tin, and smooth over so thats its completley smooth all over. I just used a spoon to do this, nothing fancy.
Then put this to one side for now, so you can do the next stage.





You then want to measure out 200g of your choice of chocolate (white chocolate in my case) and add this into a bowl with 30g (2 tbsp) of creamy peanut butter.



You will then need to melt both of these together until you get a smooth consistency.
You can do this by either melting them in a glass bowl over a pan of hot water, or what i did was keep putting it in the microwave 10 seconds at a time, stirring in between so that you don't burn the chocolate. I think altogether it took me about 40 seconds in total, until i had the smooth consistency.




Then to make the second part of the topping, put 30g (2 tbsp) of creamy peanut butter into a pan and melt this slowly over a low heat. You will need this to go into a runny consistency as this is what you'll be making the marbling effect with on your topping.





Then go back to your digestive biscuit base that you prepared earlier, and pour on your melted chocolate of choice, and spread this out evenly across the whole thing. Then smooth over with back of a spoon again.














Then with your melted peanut butter, add drops of it onto your chocolate base that you just done, and with a knife, carefully make swirls with the peanut butter and white chocolate. You can be as creative as you want to me.

I totally forgot to take a picture before i made the swirls in the chocolate.






This will then need to be put into the fridge and left to set for 2 hours, I left mine for about 3-4 hours though just to make sure it had all set properly before i cut it. I then just cut it into small square portion sizes.
I then just cut mine into square and put onto a serving plate, I did put mine back in the fridge tho after i had cut it as i didn't want the chocolate to start melting as it was a hot day!
